Don’t judge me, but here is how my mornings have been playing out lately…
6:15am – alarm goes off, hit snooze
7:00am – secondary alarm goes off, hit snooze
7:30am – wake up in panic, going to be late for work
7:30am – 7:50am– shower, brush teeth, brush hair, do hair, put on makeup, iron work clothes, put on work clothes, scourange around in fridge for something for lunch, nothing in fridge, takes an apple and reminds self to cook something in advance for lunches
7:50-8:00am – grabs keys, handbag and phone, realises haven’t had breakfast, has 5 mins before leaving for work, makes porridge, too hot to eat, puts into container, and drives to work.

Looking back on that, I realise I still need to do some work in the whole ‘being-an-adult’ department. HOWEVER, whenever I fail myself in the morning, that big bowl of porridge is right there to fill my belly up and give me a dose of much needed nourishment.
Truth is, oats are the shit when your life is a mess. They are quick, easy and healthy. Now, go ahead and make a batch of oats while go to work out a better morning routine and evaluate my life choices.
What you’ll need:
- 1/2 cup of oats
- Water – to cover
- A dash of milk of your choosing (I have used, almond, soy and regular and all do the same job)
- A sprinkling of chia seeds
- Toppings: sprinkle of desiccated or shredded coconut, blueberries and sweeter of your choice (I go for rice malt syrup, honey, or maple syrup)
How it works:
Pop your oats into a microwave safe bowl, cover your oats in water. Heat in the microwave on high for 2 minutes. Once done, take out and stir in the milk and chia seeds. Pop back into the microwave for another 2 mins. Once done, top with coconut, fresh berries and a little bit of sweetener, if you like.

NOTES:
- You don’t have to use coconut and blueberries, add whatever you like. I usually pop in whatever is in the fridge/pantry at the time (this may include nuts, dried fruit, a bit of cacao powder, maca powder, protein powder etc).
- Try stirring through some peanut butter, don’t think about it, just do it. You will be pleasantly surprised.
- You can use frozen berries too, just put them in along with the water when you first put your porridge into the microwave.
- Making porridge for more than one? Double the quantities, pop into a bigger bowl and adjust microwave times accordingly.
- To make this recipe gluten-free, just ensure you are buying gluten free oats. And for dairy-free ensure you use non-dairy milk, but you knew that đŸ˜‰
