These biscuits are especially amazing for a few reasons:
1. They taste GREAT!
2. No flour or gluten
3. No dairy
4. They take NO time to whip up
5. A lot less sugar than your average biscuit recipe
6. The title is a full on alliteration-fest Choc, Chia and Cranberry Cookies… I.mean.come.on!
Double-choc chia and cranberry cookies
Makes approx 10 cookies
What you’ll need:
1 medium ripe banana, mashed
1/2 cup almond butter
2 tablespoons chia seeds
2 tablespoons cacao powder
1/4 or 1/8 cup dark sugar (depending on sweetness preference)
1/2 teaspoon vanilla extract
1/4 teaspoon baking soda
1/8 teaspoon salt
1/4 cup cranberries (try to get the packaged ones without added sugar)
1/4 cup dark chocolate chips

How it works:
- Preheat oven to 180°C. Line a baking tray with baking paper.
- Mash banana in a medium bowl. Add almond butter, chia seeds,cacao powder, sugar, vanilla, baking soda, and salt. Stir well to combine. Fold in cranberries and chocolate chips.
- Using a spoon or cookie scoop roll into 10 balls. Flatten slightly with the back of the spoon.
- Bake for 10-15 minutes, or until the outside it a little crunchy and the insides are gooey and melty.
- Allow to cool before removing from the baking tray to a wire rack.
NOTES: your batter will be very sticky and not look like traditional biscuit batter. Don’t freak out, this is normal, just make sure you combine the mix very well so you don’t get clumps.
